Google Shopping requires merchants to submit their data feeds in the official language of the country that is targeted. If the country has multiple official languages, any of these languages can be selected. Landing pages and websites are also required to be in any of the official languages of the target country.
You could create a new data feed, target Canada and choose English as the content language, adjust with the fancy new shipping features and off you go
