● 4 slices of bacon
● 1/2 cup shredded mozzarella cheese
● 1/2 teaspoon garlic powder
● Salt and pepper to taste

● 2 ripe avocados, diced
● 1/4 cup diced red onion
● 1/4 cup diced tomato
● 2 tablespoons fresh cilantro, chopped
● 1 tablespoon lime juice

Instructions:
Preheat your oven to 375°F (190°C).
Start by making the avocado salsa. In a bowl, combine the diced avocados, red onion,
tomato, cilantro, and lime juice. Season with salt and pepper to taste. Set this aside.
Slice the avocados for stuffing the chicken breasts and set them aside.
Lay each chicken breast flat on a cutting board and, using a sharp knife, make a
pocket in the center by slicing horizontally but not cutting all the way through. Be
careful not to cut through to the other side.
Season the inside of the chicken breasts with garlic powder, salt, and pepper.
Place sliced avocados and shredded mozzarella cheese inside the pocket of each
chicken breast.
Wrap 2 slices of bacon around each chicken breast, securing the avocados and
cheese inside. You can use toothpicks to hold the bacon in place if necessary.
Heat a skillet over medium-high heat with a little olive oil. Once hot, add the stuffed
chicken breasts and cook for about 2-3 minutes per side until the bacon is crispy and
the chicken is browned.
Transfer the chicken breasts to a baking dish and bake in the preheated oven for
about 20-25 minutes or until the chicken reaches an internal temperature of 165°F
(74°C).
Once the chicken is done, remove it from the oven and let it rest for a few minutes.
Serve the stuffed chicken breasts with a generous portion of the avocado salsa on
