Looking up at the grey night sky, John Jhonerston grimly pondered about existence as he shuffled
down barren boulevard. With the acknowledgement of being constantly monitored by the secret
police, John awkwardly put one foot in front the other; the small trip to the grocery store starting to

Humanity just barely survived without natural light by growing plants in indoor farms with artificial
light. Snow was falling again, and John had to get to the grocery store quickly. Trying to cover his
face, he walked at a steadfast pace, while simultaneously trying to cover up all of his body in hopes
that nothing but garments are burned. John finally arrived at the grocery store after a couple of
minutes of enduring the strong wind and acidic snow. After stepping in, he smelled of burnt leather
and wool. John proceeded to check himself in a two way mirror usually used for shake–downs and
inspections, and he noticed that the outer layer of the back of his leather trench jacket was
discolored from the acidic snow. He immediately saw some more snowflakes resting on his
shoulders, slowly eating away at the leather; John wiped the snow off and consequently received
slight burns to his hand. After enduring a stinging pain, John finally started shopping. The immense
array of cameras is quite frightening to see at first. It took John some time getting used to it. Feeling

have access to many restaurants and fast food outlets, so we not only have ample food at our

Throughout the semester in class, we read a lot of short stories, and poems. One of the stories that
stuck out to me the most to me, is The Canterbury Tales written by Geoffrey Chaucer. This tale is
based on the millers, which is the topic of my paper. When it comes to the millers, there is a lot to
know such as who they are, what they do, how the mills worked, their role in the Feudal system,
how they make a living, what they ate, where they lived, what kind of clothing they wore, how the
millers are able to assure they can continue to make enough money to live on, and so much more. To
start with, a miller is someone who worked in a mill, especially a grain mill ("Medieval Miller"). A
miller would work on a lord's estate and rented the mill from a lord for periods of a year at a time. A
miller lived above their mills or in cottages very close to their mills, so they could wake up and go
straight to work. Millers wore Roman style tunics made of wool and they wore leather shoes.
Sometimes the millers also wore a leather apron and cap, that was on rare occasion. Millers had a
special food diet, in which they ate similar to a serf, eating pottage, soup, bread, ale and sometimes
pork. miller's had better bread because they had better access to better grains. Unfortunately, millers
did not get paid that well as they only got one–twelfth or one–sixteenth of grains that they grew and

Here in Canada the loaves have shrunk and shrunk over time and are more like 12–inches now,
though they're being offered at the same price as before: between $ 2.50 and $ 3.50, depending on
the brand and the store where you buy it.
I do understand that the price of flour has gone up, as has the production cost. But, honestly, those
tiny toast loaves you see in grocery stores now look ridiculous!
Not to mention their consistency, which is more like foam. If you squish a store–bought toast slice,
you can make it paper–thin without too much effort. Not so with the home–baked toast.
I wonder whether the cost wouldn't go down if they would leave out all those funny–sounding
ingredients and would use only flour, water and yeast?

In January, 2013 we began our experimental work by conducting detailed analysis of results of
bread produced with 100% Ontario based flour. Since direct application of Ontario based flour
resulted in excessive dryness, and reduced volume of bread, we decided to conduct series of semi –
industrial trials in order to adapt our present formula to new flour chemical composition. The
objective of our investigation in this phase was to apply Ontario flour, and get the bread with the
same moisture, and volume as it is originally.
After this first attempt in January, 2013 we firstly tried to increase gluten structure. Gluten is
additive commonly used in bakery industry which primary function is to enhance gas retention
capacity, water absorption, and retention, as well as, increase dough strength. Initially, our formula
contained 3 – 4 % of gluten, and we tested formulas with up to 10% of gluten. Increasing of gluten
did not give significant results, and formulas with 10% of gluten had increase of volume of about
10%. We did not test formulas with more than 10% of gluten because it is very expensive additive,
and it is not economically to apply it in higher concentrations.
After learning that gluten does not give expected results, our next step was increasing protein level
by introducing the balancing the flours. We decided to introduce harder wheat flours with higher

A mixograph is a test that bakers use to test the quality of the flour. This test is very similar to the
farinograph. The farinograph and mixograph both test for the mixing quality of the dough and gluten
properties. The main difference between the mixograph and the farinograph, is the mixograph needs
a much smaller sample to run the test. The sample size for the farinograph is anywhere between 50–
300 grams while the mixograph can run samples of 5, 10, and 35 grams. The only drawback is it
cannot test the absorption because it uses a set amount of water for each test (Dapcevic).
The theory behind developing the mixograph was there was a high demand for a machine that can
use a smaller sample size to test the dough and gluten properties. This test is used to tell the baker
the quality of the flour and how much water will be needed to add to this blend of flour to optimally
mix it. The mixograph curve suggests mixing time requirement, tolerance, and optimum water
absorption (Sherwood). The mixograph test helps the baker know the mixing qualities of the dough
in a quick and precise way. It takes the guessing out of whether if there is enough water in the dough
or if it is mixed optimally. The amount of water added to the test effects the peak optimum mixing
time for the dough; dry doughs have a shorter peak time while wet doughs have a longer peak time.

INTRODUCTION
I selected to watch Pollan's series documentary instead of his book due to my difficulties in reading
and being a visual learner. I am grateful to Pollen for being able to see his story as the documentary.
This allowed a visual and hearing experience with the professionals he spoke with within their
environment along with demonstrations of what they were talking about. It was an experience to
join the people from the countries he visited in their homes/work and to learn what he was taught.
This video brings more meaning and life into his story than just words on a page.
AUTHOR
Michael Pollan is an American author, journalist, activist, and professor of journalism at the UC
Berkeley Graduate School of Journalism. For the last 25 years he has written about nature and
culture and their intersection in what we put on our plates, what is in our farms/gardens and in the
environment we have built. In 2010, he was named in TIME's 100 Most Influential People, and
received a few other awards. He does not seem to have a formal education in nutrition, however,

in order to convey the permanence of the baker's memories of the Holocaust. The speaker remarks,
as they gaze upon the baker's arm, "It's that blue code on your arm/ [, those] four numbers I can't
decipher./ They are fixed veins" (lines 5–7). The poet uses this metaphor to compare the permanent
tattoos on the baker's arm to veins because both are blue and both will be with the baker as long as

His face is also "stamped with...the reek of screams" showing how painful his memories are and
how they are embedded in him. Furthermore, the reader is told that "none of [it] grows stale"
meaning that the memories are too excruciating for the baker to forget. Above all, Cadsby, with the
use of a metaphor, compares the baker's friends that were killed in Auschwitz to "barely brown
loaves". The baker can be seen "remember[ing]/ other barely brown loaves" (10–11) as he bakes the
bread. The brown loaves that the baker recalls are actually his friends. Based on the year that the
poem was written, the baker and his friends were in Auschwitz about 50 years prior to the persona
encountering the baker. When ready and cooked, the bread becomes brown. If compared to a
human's life, the metaphor demonstrates that a person is at the prime of life when they are
"browned". The baker remembers his friends that were "barely brown" when they were killed in the
furnaces of Auschwitz and had not yet experienced the joys that life brings. In "The Baker", Heather
Cadsby compares ovens in a bakery to the furnaces in Auschwitz, the tattoos on the baker's arm to
veins and the unbaked loaves in the baker's oven to his dead friends in order to give a much deeper
understanding of just how much the baker suffered.

Our environment has a lot of problems with waste that we create and it is getting more out of hand
each year. Waste is harming wildlife, rivers, plants, and humans. I have come up with a solution to
this global problem and reasons why we need it. My solution is to develop eco–friendly/edible
silverware.
Biodegradable means to have the ability to decompose by bacteria and other living organisms.
Biodegradable products are made out of natural plant materials like corn or sugarcane. I believe
biodegradable products are a good way to reduce waste and keep our environment healthy, unlike
plastic, which many products consist of. General everyday plastic is made out of oil, one of Earth's
limited resources. Oil takes up to three hundred million years to form. Also, oil–based products that
are not reusable end up in one of the world's many landfills, which can take up to one thousand
years to decompose. Oil based products also can get washed into seas or oceans. Over time, the
plastic products can release poisonous toxins, harming wildlife and polluting nearby rivers.
Comparing biodegradable products to plastic products you can see that biodegradable products use
up to seventy percent less carbon dioxide to produce than plastic products. It also only takes twelve
weeks for biodegradable products to decompose.

machine (see Fig. 3). The process of making bread starts with collecting the ingredients like sugar,
flour, milk, malt, salt and storing them in storage. Certain types of Lorries carry flour from which

place taking the form of a tower. Other ingredients are left in the storage area (see Fig. 4). Special
dough kneading machine that is provided with a powerful double screw is utilized in kneading
process. While the ingredients are mixing together, the machine starts from a low to a high speed.
The dough became ready during five minutes before transporting it to the next place where it is
proportioned (see Fig. 5). Divider is a very special machine used to divide the dough into parts of a
certain weight that are considered. These pieces are transported from the divider to machine taking
the con shape which is responsible for give them a rounded shape which in their turn are left to be
